Mine runs around 88-90 but never goes above unless I'm doing the ring or a track day etc! You would change your stats not expensive its a start but it won't improve massively might stay 85-90 instead.
The only way to test a thermostat is to drive a car as stationary unless it's stuck closed it will get to 95-100c ish until the fan cuts in and cools it down slightly
