Before I mount these tires and wheels

I just bought 275/30/19's to be mounted on 19×10 et40 wheels for my E92 335i on the rear. As well as coilovers at the same time. My fenders are also rolled.

Im assuming I wont have any rub issues? Correct?

On my e90 lci I'm running pretty much the same size rear's (et38) and don't get rubbing. I'm not rolled either so you should be ok

I wouldn't expect an issue with stock suspension and alignment even.

Just to chime in, I'm running 19x9.5 with 5mm spacers with 275/30 Continentals.
This is on a pre-LCI e90 and no roll on the fenders.
