N54 Oil

So the book says Castrol SAE 5w30. I'm wanting to run mobile 1 euro fourmula 5w30. My question is what does SAE mean and does it really matter. Am I fine to use mobile 1 5w30

I always run rotella 5w40 N54 runs hot and it doesn’t seem to burn as much with rotella or liquimoly. In fact the oil change kit fcpeuro sells for the N54 is 5w40 as well
