Just bear in mind neither my e36 328i or the M5 were as quick as a 335i & maybe things were made better back then
For me the red stuff with pagid discs work well & I like seeing the red pads through the calipers. How they'd stand up to regular hard track days I couldn't say.
As for your issues it'd be easier if you learn how to swap out your pads & see if different pads make a difference without having to pay to have the pads changed.
I know I've mentioned it before but 335is have a floating calliper which 'float' on the slider pins, the longer one has a section that moves in & out & should move freely. You don't even have to disassemble to clean or replace the pins you can just take them out one at a time to check/clean them. If these are in poor shape this will give you vibration under braking. It's got to be worth at least having a look.

Just a warning note on that one. Track use and large high speed stops on the motorway are very different. Yo get plenty of cooling time on the motorway, not so on track days. On track you're digging regularly deep into the cars stopping capabilities and then modulating at the other corners. Basically, you're often using the brakes hard and not giving them time to recover, hence the need for upgraded (but which come with other compromises). Lastly you're not giving a lot of cooldown time to your brakes in between laps which is one of the main reason for 20 mins sessions.

For road use: OEM (which I'm pretty sure are an OEM Pagid made (at least on M cars)
For occassional track days Pagid All round RS type is perfectly fine, but they are an investment.

Basic track set up: Pagid RS19 endurance/ RS allround; Fully ventillated disks, ventilation ducts from front bumper to wheel arch; BF Goodridge braided lines; DOT 5.1 brake fluid.

Go and a see a propper BMW garage that prep full race cars or just give them a ring for advice. The important thing is to clearly explain what your requirements are and they'll advise you correctly and clearly explain to you what options you have, advantages and disadvantages of each. You'll also find that there prices are a lot lower that garages that rarely buy and install brake upgrades. Plenty of race car specialists in the UK. Even some friendly BMW dealerships will help you out on brake upgrades.

If you're looking to track your car you'll have to find some that work with the OEM brake caliper. Try AP racing maybe.
