Is this a comfort access-related or coding option that I can change somehow?

Hit the start button a second time when turning off or lock the car either
should turn it off.(Not related to comfort access)

Read the manual you press the start button successive times to cycle
through acc start and off.(which used to be the switch positions on the
key on older cars)

Or another option is to shut the car off by pressing and holding the start/stop button for second.

this is comfort access feature and this it is more convenient then without it
with or without comfort access - car will sleep only after 15 or 40 min after door lock
