Either of these lights will work.
The LUX H8 V5 starts at a 5000K color and can be adjusted up to a 12,000K color.
The LUX H8 160 are a fixed white 7000K color and are not adjustable.

Here is a comparison picture of the 160's vs the LUX H8 V5 set at 5700K. There is no "Blue" in either of them

How bad are these lights for drivers in front of you at night? I personally hate it when I'm getting blinded from my rear view mirror by someone with ridiculously strong headlights. Any info on this?

Well these aren't headlights so the light coming from them isn't focused, but its just a diffused light that comes out. I personally have never heard of any issues at all with them at night. They will be brighter than stock but since the light isn't focused it should impact other drivers

Look great at night, but during the day the outside lights are quite dim...I suppose that's just the E92 angel eyes design? Nevertheless, still an upgrade from stock. Thanks

Yes that is the design of the headlights. The outside rings are dimmer in nature than the inner ones. If you step back from the car 30+ feet they will look more even though, and that's the distance most other drivers will see the car from on the road.
