Ok ok.. as an further alternative to the Beef Wellington, we'll do a straight 340g ribeye steak.
I should point out though that the Beef Wellington for this menu is a Christmas version, so instead of a mushroom duxelles it will have a cranberry and juniper surround.


So the menu now as follows:


To Start

Four cheese souffle
Bloody Mary Cornish mussels, celery, red onion
Devilled chicken livers, mushrooms, cognac cream
Cider-roasted pork belly, roasted apple, beetroot


To Follow

Spiced butternut and parsnip Wellington, potato dauphinoise, roasted tomato cream
Roasted fillet of turbot, savoy cabbage, saffron cream
Christmas Beef Wellington, potato dauphinoise, honeyed carrots
6-hour slow roast salt marsh lamb shank, winter vegetables, garlic and rosemary mash
340g 28-day aged rib eye steak, triple-cooked chips, bearnaise sauce


To Finish

Apple and mulled wine crumble
Chocolate fondant, salted caramel ice cream
Caramelised orange and Grand Marnier tart
