The left knob is what percentage of the map sensor signal voltage (0v-5v) to start spraying at. The right knob is what percentage of the map sensor signal voltage to reach full flow. It is progressive between these two values.

So at 0% it will spray even if map is 0v (vacuum).

For 2.5bar tmap set start to 60% (3v) which should be around 9psi and full to 80% (4v) which should be around 17psi.

For 3.5bar tmap set start to 45% (2.25v) which should be around 9psi and full to 60% (3v) which should be around 17psi.

So for the stock tmap (2.5bar) if you set to recommend 80% on stock tune you won't trigger max? You will be barely triggering start at 60% .. That doesn't seem right.

At this point I am not sure either. I have only used this setting for OTS stage 2+ which targets 18psi and my current wedge tune which is also targeting around 18psi. The meth has started sparying 9-10 psi in both cases with the controller set to 60%. I have not tried 60% on stock map. You may possibly have to lower the start to 40% for it to trigger around 4-5psi.

Some other methanol controllers are not progressive. They simply turn on full flow when they reach the trigger. The reason the progressive one is nice is you can start a little less flow at lower boost levels. When I had mine setup (3.5 bar) I had it at 30 for start and 50 for full. You will feel it if there is too much methanol flow for your boost level.
