Same question here. I did my first OFC which was previously due every year under maint. plan in October of each year. Makes sense, as that is when we bought the car. Oct. 2014 was my last covered OFC. Fast forward, one year later. Last week I did the OFC myself and afterwards checked the maintenance info screen. It showed I am due for my next OFC in Oct. 2016. How does it know this? I did not reset anything!

The date always stays the same unless it's reset. The date is for the next recommended service if the car doesn't hit that mileage by that date, or it's for a time-based service like brake fluid change.
The US maintenance schedule calls for "low mileage annual oil service" when you don't hit the miles but that isn't reflected in the CBS for some reason. It shows 2 years for next oil service on the CBS when you reset it. Vehicle check is every 3 years or 30k mi I believe. Miles don't count down linearly. It's always rounded to the nearest 1000 miles (until it gets lower than 1000, then it goes by 100), and the miles to next service will fluctuate depending on your driving habits and driving conditions, as well as the oil sensor which does some rudimentary measure of oil quality. So even if you drive 1000 miles, the service counter doesn't necessarily go down 1000 miles.
