I messaged aza on Instagram and they made it sound like they won’t redo a wheel, they will sell you one though.

These guys are great in the steering wheel and dashboard restoration: https://www.woodensteeringwheels.com/. It looks like a "big brand" but in reality, they're just a few cool and enthusiastic guys (very experienced as well), who can produce high-quality custom stuff for a vehicle. And they specialize the most in BMW and Mercedes Brenz steering wheels restoration. They told me that their main focus is on wood, but they can also do leather rewrap or a combination of both (wood + leather wheels).
However, I'm not sure about the prices. Every project is unique and you have to have an idea of what you want. If you're looking for something luxury, as an example a wood steering wheel made of walnut root engraved with gold letters it'll probably cost a lot. Though, if you're okay with something simpler, it may be a couple of hundreds (I guess).
