St60 comes with 350mm rotors too, not very much larger than stock. So yes, is possible to fit under 17" Apex.
I have 370mm and run 18" Apex and have plenty of clearer that makes me believe even some low offset Apex wheels, like offset 25 or 20 might clear over the caliper.
