Wings on the BabyQ. I've been experimenting with honey and the insane Carolina Reapers, a Guinness World record holder for Scoville heat units. I found that two small drops per oz of honey was a good blend with enough heat w/o calling 911.

In the mix, wearing eye protection and surgical gloves, I added four drops hoping for the best. Actually, I was disappointed with the results. It looks like baking essentially took away all the spiciness. Anyway, the wings were still delicious.

Catfish - Marinaded, sliced into 'nuggets', deep fried
Fries - Air fried w/ olive oil, lightly sprinkled w/ salt, garlic, pepper seasoning
Salad - Fresh spinach, lite cilantro dressing w/ cracked pepper
Paired Libations - Hefe Weissbier + top self Anejo tequila

Some chile habanero sauce added for 'tasty heat'..these to enjoy along with catch-up on some F1 & IMSA racing today

Adding seasoning after cooking (baking) and before serving is another technique to intensify flavor. Serve the hot sauce/honey mixture as a condiment at the table or drizzle some on the wings after plating.
