A/c auto mode
What is the difference between these? One changes the fan speed automatic while the other stays on one speed and has to be changed manually.

The difference between those units are limited to the one on the left being from newer car, 2010+ and having an 'all' feature so you dont have to twist both knobs to get the same temp in the cabin and then also incorporating the seat heating buttons into the unit as oppose to having them down and out of the way.
Other than that there is zero difference between them, both auto dual climate cars.

Have you tried reading the Climate section in pages 105 and 106 of your owners manual?
I'm sure it will explain the purpose for each control adjuster.

One on the left, when ON, will adjust temperature in the car based on what you have dialed in. It will try to maintain it by activating cooling or heating and fan speed.
One on the right, when ON, will automatically select whether the air is taken from outside or recirculated from inside. This is done by evaluating air quality with a sensor under your hood near the filter. There is also a sensor on your windshield that reads condensation, and when you have a foggy windshield it should activate a defrosting function. |

Based on your Owners Manual page 118 you have to manually choose the fan speed:
Intensity of the AUTO program With the AUTO program switched on, automatic control of the air volume and air distribution can be adjusted: Press the left side of the (fan) button to reduce the intensity. Press the right side of the button to increase it. The selected intensity is shown on the display of the automatic climate control. The one on the left is for fan speed. The one on the right is for the auto re-circulation flaps. It works pretty much the same on all BMWs from the similar time frame.
Did BMW remove the auto adjustment of fan speed on LCI cars? |

I know on my 2008 335Xi e92 that instead of hitting the fan button to adjust the intensity, you repeatedly just hit the AUTO button. So has the same effect

There is no coding involved. Nothing is broken. AUTO is still auto. My 340 had this exact setup, and I've been inside many BMW's. This is how they do things on their later models, but I have no idea when they made this switch.
The pic on the left is of a a more modern climate control system. As pedro2u already mentioned, even when in AUTO mode, you are able to fine-tune the blower "range" (intensity). Though I feel like my E90 does a pretty good job, this is a feature I sometimes miss. Think hot sunny day. Car is a million degrees and you get in, want your AC set to AUTO, but also want to have a conversation or make a phone call. With the car on the right, the blower is going to blast your ass with air. With the car on the left, you can still leave the climate control in AUTO mode, but dial down the intensity of the blower. Hope that makes sense.

e90yyc nailed it as to how the fan speed adjustment works on the later cars. I will add that the system is smart enough to not blast cold air when it is warming up, or hot air when it is cooling down. And it ramps up more slowly than most cars with auto climate, which I think fools a lot of people into thinking it doesn't work. And of course, if you have the adjustment turned all the way down it will barely trickle out any air to start with.
I will also add that you can code the later cars to the earlier "rest heat" function instead of ALL. That allows you to have the heat run after you shut off the car - very nice while out shopping on a cold winter's day in Maine. I did this on my car, as that is more useful to me than not having to adjust each side separately, as I never change it from 70F anyway. What baffles me is why BMW didn't just make it modal - engine off? Rest function. Engine on, toggle All function. Seems like it wouldn't take much code to do that.
