Hooked up my cobb, went inside while it flashed to stage 2+, came back, car was upside down on its roof. Is that normal? Do i have the right map?

I am confused at what you are saying... Isn't brake boosting starting from a complete stop not a roll? such as M2 hold brake, rev to 2.5k - 3.5k. |

Brake boosting is when you are rolling and press the brakes and press the gas harder in order to maintain a set speed in order to load up the turbo. Not necessary on these cars IMO

Brake boosting on any turbo platform isn't *necessary* but it does give an advantage. Would you rather be at 8+ psi of boost when you start your race or 0? Sure it may only take 1 second to achieve target boost but that could be the difference between someone jumping a hood out in front of you.

^ yes 3k rpm is where you should be at starting from a 40 - 60 mph roll.. well if your in the right gear, so brake boosting doesn't really give an advantage, IMO. Also is launching the car by holding the brake in M1 or M2 and revving to 3.5k bad for the car at a complete stop?

Tune+meth setup should be similar to a stage 2+ FBO car. There is a video of clap/laloosh/asshat(or whatever screen name he has now) running stage 2+ against jeff@topgearsolutions and his V5+meth car. Its pretty close but the cobb car pulls just a little each time. Keep in mind it's 135 vs 335.
