N54 stock thermostat opening temp - in-depth questions

I think my N54 is running a bit on a cold side. I know the topic has been discussed before, that the DME controls the temp based on detected driving mode (from most ECO to most sporty), but it still doesn't explain my issues.
Even cruising for 20mins at anywhere between 60-80mph, I never see collant temps above 100C/212F, usually hovers around 95C/203F.

According to the above, the DME should be targeting temps of 105-108C. That leaves me to consider a failed thermostat, but on the other hand, it's keeping the temp reliably, just lower than it should. Is there anywhere to confirm (via INPA) the current target temperature of DME?

I've also been monitoring radiator outlet temps and it seems that the drop across my radiator is around 8C/15F - is that normal value? Just curious because when I was changing my OFHG I noticed some sludge in coolant channels, and I'm wondering if my radiator could be clogged.

If I don't get a definitive answer, I will probably go ahead and replace the thermostat, as it's not too expensive, but I'm seeing a lot of brands (good brands), which one should I get? In the order of price: SKV, Gates, Calorstat, Mahle, Behr, Ashika, Wahler, Febi, OEM?

The thermostat is DME assisted.. It still is a traditional thermostat with a set open temp, it will operate without the DME connected. The difference is there is a heating element in the wax that the DME controls and opens up before the default temp on the thermostat.

Short story is the thermostat fail just like tradition ones, because that's what they are. It sounds like yours failed partly open.

If you really want to find out unplug the thermostat and go for a ride .. This will disconnect computer and show that the t-stat is still working with a fault. The pic below is the plug to unplug.

Get on FCP Euro and get one of the OEM replacement ones.
