Jewel Bako in lower east for sushi and LIVE lobster sashimi FTMFW! (they leave the head on the plate, it's alive and moves while you eat the tail meat so don't go if you are in PETA)

If you want a Japanese theme'd restaurant, definitely hit up NINJA NEW YORK... A bit pricey, but everything is definitely worth it! If you go, make sure you make a reservation..

Being a sushi fanatic, I would recommend Sushi of Gari (upper east side) and Sushi Yasuda (midtown east). Both offer omakase, and I prefer to sit at the sushi bar to get interaction with the sushi chefs (makes for a great experience). Sushi of Gari has more creative sushi, whereas Sushi Yasuda serves sushi in a purer way. Both are great, so if you get a chance, try one!

NYC consist of 5 borough's, I think you mean you will strictly be in Manhattan. Damn tourist's, do your self a favor and leave your camera at home, last thing we need is more Asians running around with cameras.
