I don't know the N43 but aside from the oil pressure sensor it seems it has an oil pressure control solenoid/valve, part 11417584990, is that clogged/dirty/functional? Any codes stored in the dme?

it could be something with the oil pump acting up intermittently. I'd say get the electricals checked next, and maybe see if there's a software update for your car that might clear this up

If you can't find any other cause, there is probably a few broken pieces of the timing chain guides in the sump which eventually get sucked into the oil pickup tube when the engine is running and block it. Quite a common problem on the 4 cylinders.

When you turn the engine off the broken pieces of the timing chain guides fall away from the pickup, and when you start the engine again, the oil light goes out, just as you are describing. If i were you i would NOT drive the car anymore until it is fixed. You will be killing your engine.
