For a Nikon D7000, here are my tips for panning.

6. Start with wider angle shots to reduce chances of an out of frame shot. Zoom closer with practice.
7. The ultimate lens for this is the 70-200 f2.8. It doesn't miss a shot. Period! I can pick up multiple shots of every car in a group, re-focus to the next group, take 1000s of shots over a day, and hardly have a single shot out of focus. But the 70-300 or even an 18-200 will work OK. See http://sirsnapsalot.smugmug.com/Cars...1844&k=C3jHpRc for examples from the Petit Lemans last year. Note I did use a tripod in the dark. Browse to other galleries in "cars" to see other race events, such as One Lap of America.

It's not that difficult but best results do take practice. Try going to a road race or driving school. Lots of opportunities for practice. You should be able to get close to the action, along a straight or the exit to a big curve.

on this one I wanted the slowest shutter speed that would let me hand hold the camera and still get a crisp clear picture (to try and maximize the motion blur). 1/60 was the lowest I could go, so I adjusted the aperture accordingly.

that is the info from one of the pictures, it is actually a 3 Exposure HDR image. It is almost impossible to use natural lighting and get a good exposure on my black rims as well as the rest of the car without using multiple exposures. I pretty much always shoot 3 bracket photos. Sometimes I will use HDR, sometimes I just use one of the three shots but then I have a few different lighting variations to pick from!

Yeah... I'm real jealous. The shots were taken in direct sunlight. You should have had no problem exposing them.

... not possible to correctly expose the sky, bright areas of the car, and dark areas of the car with natural lighting in one shot. Maybe most of the car would look alright, but the sky would be completely washed out.
