ST coilover install help! Adjustment collar

So I'm using the included adjustment wrench but the adjustable knob spins with the spring mount. They both turn at the same time. What am I doing wrong?

I assume you are referring to the rear. KW (ST) states in the installation instructions that the rear perches can only be adjusted off the car.

Some have used a C-clamp or similar to hold the base while they turn the adjustment collar but it is tricky.

One thing I did is I applied a semi-permanent lube to the adjuster assembly before I installed. I used a product called Boesheild: http://boeshield.com/

Of course I haven't had to try and adjust the rears though so I can't speak to efficacy. It is a great product to protect them though. I ended up setting my rear adjusters are the max height allowed per KW and that was perfect for me.
